1/2 cup chopped onion
1/2 cup water
4 well-beaten eggs
1/4 cup fine dry bread crumbs
1/2 tsp salt
1/8 tsp pepper
1/8 tsp dried oregano,crushed
2 or 3 drops bottled hot pepper sauce
2 cups shredded cheddar cheese
2(6 ounce)jars marinated artichoke hearts,
drained and finely chopped
Cook onion in water till tender,about 5 minutes;drain.
In bowl,combine eggs,bread crumbs,salt,pepper,oregano,and hot pepper sauce.
Stir in onion,cheese,and artichokes.
Spread in greased 11x7 1/2x1 1/2-inch baking pan.
Bake in oven at 350* for 17 to 18 minutes.
Cut in 1-inch squares.
Serve hot garnished with pimiento strips,if desired.
