1 1/2 quarts chicken broth

2 tbsp finely chopped ginger

2-3 tsp soy sauce

1 whole chicken breast,skinned

boned and cut into 1/2" cubes

1/2 pound mushrooms,sliced

3 cups thinly sliced bok choy

1 cup diced firm tofu(bean curd)

1/2 cup sliced green onions(including tops)

1/2 pound tiny cooked and shelled shrimp

1/4 cup chopped fresh cilantro(coriander)

Ground red pepper(cayenne)or

chili oil(optional)


In a pan combine broth,ginger,and soy sauce.Bring to a

boil over high heat.Add chicken,mushrooms,bok choy,tofu,

and onions.Cook,uncovered,until chicken is no longer pink

in center(cut to test)

Remove from heat and stir in shrimp and cilantro.season

to taste with red pepper,if desired.
