1 pack of rice noodles

2 tbsp oil

1 cup prawns

1 cup lamb,diced and cooked,

1 cup spinach shredded

1 cup sprouts

4 garlic pods sliced

2 red chillies,sliced

1 stem lemon grass,finely chopped

1 tbsp freshly chopped coriander

5 cups of chicken stock

2 tbsp lime juice

1 tsp lime rind,gratted

2 tsp sugar

salt to taste

6 basil leaves


Cook noodles,drain,toss in a tsp of oil,and pile onto soup plates.

Heat oil add garlic,saute.Add lamb,red chillies,lemon grass and

coriander.Pour in chicken stock,stir in lime juice and rind.Add

sugar,salt,spinach and sprouts and prawns.Simmer for few minutes,

add basil leaves.Pour the soup over noodles and serve.
