Roast mustard seeds,sesame seeds,and fenugreek seeds.
Heat the oil upto just below the smoking point.Cool completely.
Mix all the powders and salt in the oil.
Remove the seeds of the mangoes and cut into required size pieces.
Add the masala oil mixture and mix thoroughly.Fill into glass jars.
Cover and keep aside ,after 3 days mix the achaar thoroughly before using.
Store in a cool dry place.Good upto 3 to 4 months.
