Vegetable Korma

Ingredients:

1 kg potatoes,peeled and

cut into large pieces

2 tbsp oil

1 tsp mustard seeds

10 curry leaves

1 onion,finely chopped

2 garlic cloves,finely chopped

2 green chillies,seeded and finely chopped

30 gm butter

1 cup milk

1 tsp salt

1/2 tsp garam masala powder

1//2 tsp coarsely ground black pepper

1 tbsp chopped coriander leaves

Method:

Cook the potatoes in salted water until tender.Drain well.

Meanwhile,heat the oil in a small frying pan over high heat.

Add the mustard seeds and curry leaves,when they splutter

reduce heat to low and add the onion,garlic and chillies.

Cook until the onion is translucent.

Mash the potatoes until smooth.you can do this in a blender.

Beat in the butter,milk,salt,garam masala and black pepper.

Add the onion mixture,mix,and add the coriander.
