Baghare Baigan

Ingredients:

500 gms brinjals,small,seedless

small lime sized tamarind,soaked

in warm water(extract pulp)

10 flakes garlic

6 flakes garlic,finely chopped

1"piece of ginger

1 onion,finely chopped

1 tsp jeera(cumin)

2 tsp dhania(coriander seeds)

2 tsp til(sesame)

2 tsp khus khus (poppy seeds)

12 mungphali(peanuts)

2"dry khopra(coconut),desiccated

2 tsp chilli powder

1/2 tsp turmeric powder

4-5 tbsp oil

A few curry leaves

2 broken red chillies

Salt to taste

Method:

Roast the following in a few drops of oil and grind to paste:

til,khus khus,mungphali,khopra,dhania,jeera and chopped

onion.

Grind the following:

ginger,garlic, tamarind pulp,chilli powder and turmeric and

salt to taste.Mix both the paste and set aside.

Slit the brinjals in 4 keeping the stem intact.Stuff the brinjals

with the masala paste.Heat oil and add chopped garlic,

broken red chillies and curry leaves.Fry a little before putting

in the stuffed brinjals and little water.Cook covered,on slow

heat ,till tender.
