2 cup maida
50 gms urad dal(black gram)
50 gms chana dal(bengal gram)
1/2 tsp jeera(cumin seeda)
2 tsp dhaniya(coriander) powder
2 tsp saunf(aniseed)powder
1/2 tsp amchoor(dry mango)powder
1/2 tsp red chilli powder
1/2 tsp garam masala
1/4 tsp soda bicarb
salt to taste
a pinch of hing(asafoetida)
oil for frying
Wash and soak urad dal and chana dal for 6 hours.
Drain water and ground both the dals to paste.
Heat 2 tbsp oil in a pan.add hing and jeera,then add
ground dal paste,dhaniya powder,saunf powder,red
chilli powder,garam masala powder,amchoor powder
soda bicarb and salt,and roast.
Mix salt in maida,add 2 tbsp oil and mix well,add water
to make dough,cover with damp cloth for 15 minutes.
make small portions from dough.
Heat oil in kadai,roll one dough portion,place the dal
mixture on it,cover from all sides.Roll to make kachori
shape.deep fry till golden brown from both sides.
Serve with sweet and sour chutney or tomato sauce.
