Ingredients
400 gm chicken pieces , boneless, slightly cooked 3 tbsp oil 1 1/2 tbsp green curry paste, 2 green chillies, chopped, 4 cups thick coconut milk, 1 tsp sugar , 1 cup fresh green peas , cooked 1 tsp lemon grass, ground, pith discarded 1 tsp mint leaves, minced, salt to taste

Method
In a large pan , heat oil and stir fry curry paste in it. Add chillies and lemon grass paste. Add coconut milk , salt and sugar.
When the mixture bubbles, add chicken and cook on a low flame till chicken is cooked.
Add cooked peas and the mint leaves.
Simmer till blended and serve hot. |
