Ingredients: 8 ripe tomatoes,quarted and
seeded 1 tsp brown mustard seeds 1/4 kg red onions,finely chopped 2 medium green chillies,halved, seeded and
finely chopped 1/2 tsp salt 1 tbsp chopped fresh mint 1 tbsp chopped fresh coriander leaves
Method: Chop tomatoes finely.Heat a pan over high heat, add mustard seeds,when
they splutter add tomatoes and fry very quickly for 20-30 seconds. Remove the tomatoes from the heat and add the onions,chillies,salt,chopped
mint and coriander. Mix well. Cool the salsa then chill it for 2 hours before serving.
