Chicken in Coconut Milk

1 chicken(about 3 pounds)cut into pieces

10 shallots(brown onions),chopped

8 cloves garlic

5 red chillies

1"piece of ginger

1 tsp turmeric powder

2 tbsp oil

5 fragrant lime leaves

2 stalks lemon grass,bruised

1" galangal,sliced(a root similar to ginger)

1 tsp coriander powder

2 cups water

3 cups coconut milk

salt and pepper to taste

5 green chillies,slit

shallots,fried(to garnish)


Wash chicken and pat dry and set aside.Ground the shallots,

garlic,chillies,ginger,turmeric powder.

Heat the oil and add the ground paste together with the lime

leaves,lemongrass,galangal and coriander.Saute for about 5

minutes .

Add chicken and saute until it is well coated with the spices.

Add water and simmer,uncovered,until the chicken is half cooked,

then add the coconut milk.Season to taste with salt and pepper.

When the chicken is almost cooked,add the green chillies and

continue cooking until tender.Serve sprinkled with fried shallots.
