Ingredients:
1 kg mutton
2 potatoes
4 onions
8-9 red chillies
1 bunch coriander leaves
4 green chillies
1 1/2 garlic
5"piece of ginger
2 tsp coriander seeds(dhaniya)
8-9 pepper corns(kalimiri)
4-5 cloves(lavang)
2 sticks cinnamon(dalchini)
2-3 elaichi(cardamoms)
1/2 tsp poppy seeds(khaskhas)
1/2 tsp aniseeds(saunf)
1/2 a coconut
2 tsp turmeric powder(haldi)
4 tsp ghee
oil for frying
salt to taste
Method:
Clean,wash and chop meat into bits.Wash ,
and cut potatoes into medium sized cubes.
Heat a little oil,fry red chillies,and coriander
seeds.Grind this with green chillies,coriander
leaves and turmeric powder to a smooth paste.
Marinate meat with this paste.
Grate coconut,slice 1 onion and chop the remaining
3 onions.
Heat a little oil,add cloves,cinnamon,cardamom,pepper
poppy seeds and aniseeds and fry for while.
Fry sliced onion and coconut till light golden brown.
Grind fried masala ,garam masala ingredients,onion
and coconut to a smooth paste.
Heat ghee,add chopped onions and fry till golden brown.
Add meat and potatoes and fry for a few minutes.Add
salt to taste.Add 2 cups of water and cook till done.
Garnish and serve hot.
