500 gms boneless mutton,cut into cubes
2 tsp raw papaya paste
2 tsp ginger-garlic paste
2 tsp jeera powder
1 tsp black jeera powder
1/4 tsp black pepper powder
1/2 cup curd
1 tbsp vinegar
1 tbsp tomato sauce
1/2 tsp red chilli powder
salt to taste
2 tbsp ghee or oil
A pinch of orangish-red color
6 black pepper and 5 elaichi,coarsely ground
Juice of 2 limes
Mix ginger-garlic paste,jeera powder,black jeera powder,
papaya paste,1/4 tsp black pepper powder.Rub this mixture
on the mutton pieces and marinate for 4-5 hours.
Now mix curd ,tomato sauce,vinegar,1 tbsp oil,red chilli powder
salt to taste,color,with mutton pieces.
Apply a little oil on the skewers and arrange mutton pieces little
away from one another and roast on a grill for 15-20 minutes,turning
from time to time.Now baste with lime juice and sprinkle black pepper
and elaichi powder and roast for another five minutes.
Serve hot with sliced onion and sauce.
